Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 1 scoop vanilla protein powder
  • 1/4 cup mini chocolate chips
  • 1/4 cup rainbow sprinkles
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (if needed for consistency)

Instructions

  1. In a medium bowl, combine rolled oats, peanut butter, honey or maple syrup, protein powder, mini chocolate chips, rainbow sprinkles, and vanilla extract.
  2. Stir the ingredients together until well combined. The mixture should be thick and slightly sticky.
  3. If the mixture seems too dry, add milk one tablespoon at a time until it reaches a consistency that holds together when rolled.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. Place the protein balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to allow them to firm up.
  7. Store in an airtight container in the refrigerator.
