Ingredients
Scale
1 cup almond flour
1/4 cup unsalted butter, softened
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon baking soda
Pinch of salt
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate small bowl, whisk together the almond flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. The dough will be soft.
Drop rounded tablespoons of dough onto the prepared baking sheet, about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers are still slightly soft.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For chewier cookies, slightly underbake them.
Store cooled cookies in an airtight container at room temperature for up to 3 days.
These cookies are a great gluten-free alternative for anyone looking for simple cookie recipes or grain-free desserts.
