Ingredients

Scale
  • 1 box (15.25 oz) cake mix (any flavor)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract (optional, for enhanced flavor)
  • Powdered sugar, for rolling

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine the cake mix, eggs, vegetable oil, and vanilla extract (if using). Mix until well combined and a dough forms.
  3. Place a generous amount of powdered sugar in a shallow bowl.
  4. Roll rounded tablespoons of dough into balls.
  5. Roll each dough ball thoroughly in the powdered sugar, ensuring it’s completely coated.
  6. Place the coated dough balls about 2 inches apart on the prepared baking sheets.
  7. Bake for 9-11 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
