Make fudgy, crackly-top cookies in minutes using boxed brownie mix. Perfect for parties or a quick dessert.

  • 1 box (18.3 oz) brownie mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (optional)
  • 1/2 cup M&M’s (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine the brownie mix, eggs, vegetable oil, and vanilla extract. Stir until just combined. Do not overmix.
  3. If using, fold in chocolate chips or M&M’s.
  4. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  5. Bake for 9-12 minutes, or until the edges are set and the centers are still slightly soft.
  6. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra fudgy cookies, slightly underbake them.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
  • You can roll the dough balls in powdered sugar before baking for a crinkle effect.
